01The Counter
Sushi Koya is an intimate omakase bar tucked onto a tree-lined block of the Upper West Side. Twelve guests sit at a single counter, close enough to watch every cut, every press of rice, every brush of soy.
There is no menu to study and nothing to decide. Omakase means "I leave it to you." The chef reads the market, the season and the room, and builds the night around the best fish of the day, some of it carefully dry-aged in house.
